EARTH CAFE: No Gluten, No Bake, No Dairy Cheesecakes Does NOT Mean “No Good”!

When Craig over at Earth Cafe contacted me asking me to try his vegan, no bake, gluten free, non-dairy cheesecakes my first reaction was (to be perfectly honest) repulsion.  “Um… sure, why not.”

100_0934 I was having a small dinner party at my place with a bunch of foodie friends and I thought it would be a perfect occasion to collectively GAG on diet desserts together.

Damn, I was wrong.  No, seriously.

Everyone, including myself, was shocked and/or awed by how delicious these "cheesecakes" were.  BTW, NONE of us who were in attendance would classify ourselves as a vegan a vegetarian and/or health nut.  So, this was the real deal. 

Apparently, the folks over at Earth Cafe have learned how to soak various nuts (ie. cashews) and then effectively form the pulp into a creamy, dairy-like consistency that closely -- if not EXCEEDS -- the delicious texture & flavor of a traditional version of the confection. The ones we tried were moist, not too sweet and superb as desserts in their own right, regardless of whether they were good for us or not. 

Of course, "tasting is believing" and you can try it yourself if you don't believe me. Last I checked on their store locater you can get Craig's desserts at Whole Foods, Ralph's, Mother's Market and more outlets.

Give it a try and I guarantee a surprisingly pleasant, gag-free occasion. No, seriously.
